Coconut Granola

One of my favorite staples is homemade granola. I love having a stash of granola for topping yogurt with fresh fruit in the morning or for snacking on in the afternoon when the slump hits me. It is nourishing and takes about 30 minutes to make!  

Makes about 6 cups

Ingredients

3 1/2 cups rolled oats

1 cup unsweetened shredded coconut or coconut chips

2 1/2 cups nuts, coarsely chopped (this batch had a mix of slivered almonds and chopped walnuts, but I use what I have on hand)

1 1/2 cups puffed rice cereal

1 teaspoon sea salt, preferably fine-grain

1/2 cup brown or turbinado sugar

1/2 cup maple syrup

1/4 cup coconut oil

Instructions

Preheat the oven to 350°F. Combine all the dry ingredients in a bowl. In a small sauce pan combine the brown sugar, maple syrup and the coconut oil, stirring constantly until incorporated. Remove from heat and pour onto the dry ingredients and mix well, distributing evenly. Scoop the granola mixture onto the baking sheet and spread into an even layer. Bake until just golden, approx 45 minutes, stirring half way. Let cool on the baking sheet, then break up and store in airtight containers. Letting it cool before stirring is a good way to get clumps, so be patient!
