Perfect Poached Eggs on Avocado Toast

This is a perfect breakfast, lunch or dinner meal. Even though we see a lot of this out there, there's always a place for a delicious avocado toast in my heart! It's simple but so tasty with a little kick of spice to get your taste buds smiling.
Here is my classic recipe for avocado mash and poached egg on whole grain toast. 

You'll need:
2 slices of whole grain toast (I love Trader Joe's Sprouted Flourless Whole Wheat Berry Bread)
1 avocado
olive oil
1/2 a lemon
2 eggs
pinch of red pepper flakes
sea salt and pepper

For the mash:
Cut the avocado in half and remove pit. Scoop out the flesh into a bowl and smash with a fork. Drizzle olive oil over, squeeze the lemon juice from the lemon over and sprinkle with sea salt. Stir together. 
Toast the bread slices.
To Poach The Eggs:
Fill a saute pan halfway with water add a generous pinch of sea salt. Bring to boil. Reduce to a simmer and crack your eggs separately into a measuring cup and gently submerge each egg separately into the hot water and release the cup. Gently stir the water around the eggs so that the whites gather together around the eggs. Turn off the burner and cover the pan. Let them sit for 5 minutes. The whites should be firm and the yolk slightly runny.
Take the toast and place on a plate, scoop the avocado smash onto the top and then top each slice with an egg, using a paper towel to gently blot any extra water from the egg. Add a pinch of red pepper flakes and fresh ground pepper and a dash of sea salt.
